               Malayali Fish Curry

Ingredients      Serves 4

1 tablespoon oil 
600g white fleshed mild fish (no bones)
1 bottle Tomato’n’chilli chutney
400mls coconut milk
2/3 tspn mustard seeds
1/3 tspn fenugreek seeds
5 fresh curry leaves (optional)
2 med. onions, finely chopped
1 scant tspn Garam Masala
Broccoli florets (optional)

 

Method

  • Cut fish into large pieces & marinate in chutney for 20 mins.
  • Heat oil in large heavy based saucepan.
  • Add mustard & fenugreek seeds.
  • Once popping slows down, add curry leaves, onion & garam masala.
  • Cook until soft.
  • Add coconut milk, then marinated fish & all marinade. Add up to 350mls of water to achieve desired consistency.
  • Add additional vegetables e.g. broccoli
  • Simmer until fish & vegetables are just cooked through.
  • Taste & adjust seasoning as preferred.
  • Serve with steamed rice.
